My roommates and I spend a lot of time in our kitchen and Courtney is often much better at capturing the food I make than I am. I'm a big advocate of making something out of nothing (aka using random, leftover ingredients without having much of a plan). The other day I whipped this up for breakfast using an extra half of an avocado I had, leftover black beans, and a lonely jalapeno that was about to get thrown away.
