Rainy Day Salad

1 egg - hard boiled
lentils - cooked
leafy greens - I used kale and chard
red onion - sliced

olive oil
red wine vinegar
dijon mustard

It was a rainy day. I was in need of groceries. All I had in my kitchen was some leftover kale and chard, lentils, eggs, and half an onion. So I put them to good use. I came up with this comforting, hearty salad. I gotta say, it was pretty tasty.
