Kale Yeah!


I was on a serious kale kick last week. I probably ate it every day. Yep. It's that good and its awesome for you. Kale has more nutrients with fewer calories than almost any other food. When raw it tastes earthy and similar to cabbage only it tastes greener. Greener? Yes, greener. and when cooked it has a much more subtle taste and is less bitter than spinach. Here's what I did with it:

Kale Salad:
Chop some raw kale, slice some radishes, throw in some crunchy sprouts (sprouted lentils, garbanzos, and beans). Top with Oil and Red Wine Vinegar. Keep it simple, keep it fresh :)

Sauteed Kale:
In a little olive oil and a pan cook up some sliced onions and chopped garlic. Once the onions are fully cooked add chopped kale and drizzle with a little olive oil, red pepper flakes, and salt and pepper. Saute until the greens are cooked to your liking and just before you take it off the heat add a tiny bit of lemon juice or red wine vinegar. Toss. Add toasted pine nuts. Serve immediately.

Green Juice:
I had to get creative with this one because I don't have a juicer. In a blender I put one large leaf of kale, a ginger drink (i used Ginger Soother although you can also grate some ginger root into it instead but I was out), lemon juice, water (I added a cup of mint verbena tea instead to give it a more refreshing taste). Blend until there are no more chunks of kale. The more you chop the kale, the more you release sulfur-containing phytonutrients (or so I read) so don't worry about overdoing it. It was delicious and I'm now obsessed with green juice. I think it would also be good with some apple and celery juice added.

That's so funny; I had a similar kale-themed week. I bought a huge bag of it and kept throwing it in everything I cooked. So delicious and versatile. I loved it in a coconut Thai curry.
