Today for breakfast I had a poached egg on a feta and herb polenta cake.... I was proud of this one

A while ago I talked about a lentil, avocado, cranberry, smoked trout, goat cheese, balsamic vinegar, walnut salad.... Courtney and I recreated it the other night and I snapped a photo.... this time we substituted the walnuts for pumpkin seeds.... needless to say it was delish! A good fall salad.

When I was sick last week my friend/motherly figure Courtney made me a tasty veggie pita and some butternut squash soup. I felt better instantly :)

Breakfast last week: apples and blueberries, pumpkin seeds with almonds and hazlenuts, simple but pretty... just the way i like it.

Brunch last week: two eggs over easy and a simple salad of arugula, tomato, lemon juice and evoo, and some paprika dusted feta.
